Volume 12, Plate XXVII / Mammalia (Mammals)
Short-Horned Breed of Cattle
The short-horned British breed, principally of Lincolnshire, Yorkshire, Durham, Northumberland and Berwickshire and now common in southern Scotland, derives from a Dutch stock and is handsome, compact yet elegant, with smooth skins, thin hides and blended colours of red, white and roan. It feeds easily to a large size, commonly sixty to a hundred stones and occasionally beyond, reaching heavy weight at an early age, and yields abundant milk noted for its Yorkshire firkin butter.
